Earl Grey Chocolate Cupcakes

Josh and I once shared an Earl Grey chocolate bar that was so good that it inspired me to make these Earl Grey Chocolate Cupcakes. I made these last night for dessert at my parent’s house and everyone loved them! My dad took a finger-lick of the batter and said, “Hmm…surprising!” He had never had Earl Grey tea before so for him it was a surprising flavor, but for us Earl Grey lovers, it was a beautiful marriage of bergamot and chocolate.
I got a little lazy and used store bought vanilla icing, but next time I want to make the buttercream frosting from Vegan Cupcakes Take Over The World. I did however make a chocolate ganache to drizzle over the icing in hopes to make it a little more fancy (which it did) and a whole lot more chocolaty (which it did). And even though my dad thought it was a “surprising” flavor, he ended up eating two of them.

I love experimenting with chocolate flavor combinations, and I think this one was a real winner :)

oh my god, im knitting!

yep its true, im knitting, and i think its so much easier than crocheting. I think were gonna make another blog called “No Whey Crotchet!” That would be rad, im hooked.

No whey, crochet?

A few weeks ago Josh and I got into a crochet craze and decided we wanted to learn how to do it. We went out and bought one of those “I Can’t Believe I’m Crocheting!” books and we found that Michaels has a pretty cool selection of organic cotton yarn and bamboo and soy blends. We were super excited about this. Soy yarn?! A vegan’s dream! So we went home, got out our ergonomic needles, and tried our best to learn to crochet. I’m one of those visual learners so even though there were illustrations in the book, I had a hard time figuring it out. I ended up kind of fudging it and made up my own way of doing it (hah).

Even though I knew it was the wrong way, I kept doing it that way because I wasn’t really following the instructions very well. After doing some research online, a lot of people say that it’s much easier to have someone show you how to crochet instead of trying to learn from a book. So the first person I thought of was my grandmother. She crocheted a blanket for me when I was a baby, which I ended up calling “Bonnie” for some unknown reason. So we went over to her house and I asked her to show me the ropes..it was much easier having someone show you. It was also amazing to see how easily she could pick it up again, I guess it’s like riding a bike. Then she pulled out some of her old patterns that she’s had for 30 years? It was insane. She even had the original pattern she used to make my Bonnie, which I still have!

Unfortunately there are no dishtowels or potholders or scarfs to post pictures of just yet, but there will be (hopefully) soon! Apparently there’s a big vegan crochet/knitting/crafty subculture out there, like these blogs we found, Vegan Craftastic ,Bittersweet, and our most favorite blog to read for comic relief, Shut Up, I’m Counting. We’re hoping to be able to make some little amigurumi animals..how can you resist those?

Chocolate banana bundt cake

Last night we were craving something sweet so we looked to Veganomicon for some help. We saw a recipe for a chocolate bundt cake and since we just bought a bundt cake pan, we really wanted to try it. The recipe called for apple sauce to use instead of most of the oil, but we didn’t have any applesauce. It was 10pm and the last thing we wanted to do was run to the store just for some applesauce, so Josh suggested we use banana instead. Since we both love the banana-chocolate combo, we went for it.

The recipe called for fresh brewed coffee, and we just bought some chocolate cherry coffee so we used that to boost the chocolate flavor. If you like flavored coffees and you have some on hand, I’d definitely suggest using it for this bundt cake. Especially any chocolate flavored coffees..it just makes the cake so much yummier. We also added some chocolate chips in there as well, just because I love to bite into a chunk of chocolate inside a chocolate cake.
So this is our twist on V’Con’s chocolate bundt cake. The banana worked great in place of the applesauce and it really gave the cake a nice subtle flavor to go with the rich chocolate.
