Black Sun Tea Infused With Fresh Mint
Being advocates of the green movement, this tea is brewed using the power of the sun. It takes a few hours to brew, but for all of you who want to do your part to reduce your energy footprint, this is the tea for you.
1 gallon cold water
6 black tea bags
3 stalks of fresh peppermint
1/2 cup sugar
Fill a pitcher with the cold water. Add the tea bags and peppermint. Place outside in direct sunlight for at least 4 hours, depending on how strong you want your tea. Bring inside and add 1/2 cup sugar (add less if you don’t like it too sweet, or more if you’ve got a crazy sweet tooth). Pour over ice, garnish with a few mint leaves and enjoy.
Variations:
- For super hippie tea, switch out the black tea for green tea.
- For a less hippie tea, and for our impatient friends, this tea can still be made by pouring boiling water over the tea bags and peppermint stalks and brewing for 4 minutes.

Does the pitcher need to be clear, or would an opaque clay pitcher work?

A- That’s a good question! I looked around online a bit and read that a glass pitcher is best for sun tea and will give you the best tasting results, but I would give it a try with your clay pitcher and see what happens!
