We did not write this crazy good recipe for a perfect cheesy sauce, but we thought it would be a shame to not share it with the world. There’s lots of ways to use this sauce, and we love them all!

1/2 cup raw cashews

2 cups water

4 oz jar pimentos, drained

1 cup nutritional yeast

2 tablespoons cornstarch

1 tablespoon lemon juice

1 1/2 teaspoons salt, or to taste

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/2 teaspoon cumin, heaping

In a blender, blend cashews to a fine power. Add the remaining ingredients and blend until completely smooth. Transfer mixture to a medium saucepan and whisk constantly over medium heat until thickened, about 5 to 6 minutes. Serve hot.

Variations:

  • For a spicy nacho style cheese, add 1/2 to 1 jalapeno to the blender mixture

Serving Suggestions:

  • Use in tacos, taco salads, or on top of our Party Time Dip
  • Spoon over steamed vegetables
  • Pour over your favorite pasta in addition to a nice tomato sauce for a cheesy spaghetti dinner
  • Fondue time! Dip bread or veggies in the cheesy sauce for a fun fondue night
