Hooray for broccoli soup! Broccoli is loaded with vitamin C as well as calcium and other awesome stuff to make (and keep) you healthy. The soy milk also has tons of great healthy stuff in it, so together you’ve got an incredibly healthy and incredibly tasty soup.

1 tablespoon margarin

1/2 cup onion, chopped

2 1/2 cups broccoli florets

1 small potato, peeled and cubed

2 1/2 cups vegetable broth

2 tablespoons margarine

2 tablespoons flour

1 cup plain soy milk

1/2 teaspoon salt

Freshly ground pepper

Sprinkle of nutmeg

In a large pot, saute the onion in 1 tablespoon of margarine until softened. Add broccoli, potatoes, and vegetable broth and bring to a boil. Simmer on low heat until potatoes have softened, about 10 minutes. Carefully transfer the soup into a blender, blend until smooth, and return to the pot. In a small saucepan, heat 2 tablespoons of margarine over medium heat until melted. Add the flour and whisk until combined. Gradually add the soy milk and whisk constantly until thickened, about 3 minutes. Add to the pot and stir to combine. Add salt, pepper, and nutmeg. Reheat until hot and serve. Serves 2-3.

Serving Suggestions:

  • Josh says sprinkle with vegan “bacon” bits (most are vegan but double check because sometimes they’re made with real bacon!)
