Creamed Pearl Onions
A favorite at the Thanksgiving table!
4 tablespoons margarine
4 tablespoons flour
2 cups soymilk (plain)
4 cups frozen pearl onions
Pinch of nutmeg
Salt and pepper to taste
In a saucepan, melt the margarine and sprinkle in the flour, stirring to blend. Gradually add the soymilk, stirring constantly until thickened. Add the nutmeg, salt and pepper and stir to combine. Stir in the onions, cover and cook on low heat for about 20 minutes, stirring often. Sprinkle nutmeg to garnish.
