Eggnog Spiced Pancakes

These pancakes are great for big breakfast and brunches around the holidays!

1 1/4 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 tablespoons vegetable oil

1/3 cup water

1 1/4 cups soy eggnog (we like Silk brand)

1 teaspoon vanilla extract

1 tablespoon rum

Preheat a large frying pan or griddle on medium heat. In a large bowl, mix together flour, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, whisk oil, water, soy eggnog, vanilla, and rum until fully combined. Add wet ingredients into dry and mix until just combined (don’t overmix, some lumps are okay). Let batter rest for 5-10 minutes. Pour about 1/3 cup of batter into a lightly greased pan and cook until golden brown on the bottom and bubbles form on the top. Flip and cook the other side until golden brown.

    Once again I am proud of the Kirk family name. You two have really stepped up to the “plate”. I would be afraid to make these recipes as I would start to look like a pancake….love to you all
