Grilled Asparagus with Lemon and Thyme

This marinated and grilled asparagus will make you wonder why you ever cooked asparagus a different way. A grill pan can be used if it’s not the season for cookouts.. but if it is, throw these babies on the grill!

2 tablespoons lemon juice

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon thyme

Fresh ground pepper

A good handful sized bunch of asparagus, ends trimmed

Salt and pepper to taste

Mix lemon juice, olive oil, garlic, thyme and pepper in a large plastic storage bag. Add asparagus and toss to coat. Let marinade for about 30 minutes or more if you have the time. Remove the asparagus from the bag and reserve the marinade for later. Arrange asparagus on the grill or grill pan in a single layer. Turn every minute or so to allow all sides to grill. Use a basting brush to spread more of the marinade onto the asparagus as it grills to keep it moist. Asparagus is done when the tips start to get a little charred. Sprinkle with salt and pepper and serve with lemon wedges.
