This is probably the best guacamole in the known universe. Make sure you prepare this right before serving to prevent discoloration..although I read somewhere that putting the avocado pit in the serving bowl with the guacamole helps to prevent discoloration as well. Of course, don’t eat the pit!

4 avocados

1/2 cup red onion, finely diced

1/2 chopped tomatoes

3/4 tsp dried cilantro

1 tsp salt (you might need more, just taste and see)

Juice of 1-2 limes

Mash avocados in a medium bowl (not too much, some chunks are great!) Add onion, tomatoes, cilantro, salt, and lime juice. Stir well to incorporate all ingredients. Season to taste (might need more salt/lime). Serve with toasted tortilla chips sprinkled with rock salt and lime juice.
