Josh’s Favorite Cornbread

Cornbread goes great with anything…especially a nice hot bowl of chili. Josh likes to put his chili right on top of his cornbread in the same bowl. This is a simple recipe that is quick to make and super delicious.

1/2 cup flour

1 cup cornmeal

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

3 tablespoons vegetable or canola oil

3/4 cup plain soy milk

Preheat oven to 375 degrees. In a medium bowl, stir the flour, cornmeal, sugar, baking powder, and salt. Add the oil and soy milk. Mix together until just combined. Spoon into a lightly greased 8 inch dish and bake for 20 minutes or until toothpick comes out clean.

Variations:

  • For our spicy fans, add a 14oz jar of green chilies into the batter
  • Top with sliced jalapenos
  • Add 1/2 cup corn into the batter for a country style cornbread
