Roasted Potatoes with Lemon and Oregano
These Greek flavored potatoes are what we think is the best way to eat potatoes, other than french fries of course
4 medium red potatoes, washed and quartered
1/4 cup vegetable oil
1 tablespoon olive oil
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon salt
3 teaspoons oregano
1/4 cup water
Preheat the oven to 375 degrees. Combine potatoes, oils, lemon juice, garlic, salt, and oregano in a roasting pan. Add the water and stir to combine. Cook in preheated oven for 30-35 minutes, stirring every 15 minutes or so to evenly coat and to prevent sticking. Serve hot. Serves 2-3 as a side dish.
