Taco Salads
We love taco salads. You can go a little more crazy with taco salads then you can with tacos because you don’t have to worry about everything staying inside the taco. Just throw everything on a plate or in a big bowl and have at it!
1 lb veggie burger crumbles
1 packet taco seasoning (check to make sure it’s vegan)
2 cups green leaf lettuce, chopped
1/2 cup onion, diced
2 Roma tomatoes, diced
1 avocado, peeled, pitted and sliced
1 cup cheesy sauce
Taco sauce
Hot sauce of your choice
2 tostadas
Cook veggie burger crumbles according to taco seasoning directions (Remember you don’t have to cook crumbles as long as you would for ground beef. Just cook it to brown a little bit and then add the seasoning). Place the tostado on a plate and spread a layer of the seasoned veggie crumbles on it. Drizzle with cheesy sauce and top with lettuce, onion, tomato, and avocado slices. Drizzle with taco sauce, some more cheesy sauce, and a few dashes of hot sauce. Serves 2.
Variations:
- Add some black or pinto beans for a more hearty salad
Serving Suggestions:
- We like to put any extra cheesy sauce in a bowl and use for a tortilla chip dip
