Tofu Scrambles
We created this because sometimes you just have to have a scrambled egg-like meal to make you feel all warm and cozy. Serve this alongside some nice wheat toast, or do what we do and put the tofu scramble right on top of the toast..or bagel…or english muffin..or, well, you get the idea.

1 block firm tofu, drained, pressed, and crumbled
2 tablespoons olive oil
1/2 cup onion, chopped
1/4 cup red pepper, chopped
1/4 cup green pepper, chopped
2 cups fresh spinach, loosely packed
1/2 cup chopped mushrooms (we love love love baby bellas)
1 medium tomato or 2 Roma tomatoes, chopped
1/4 teaspoon tumeric
1/2 tablespoon nutritional yeast
A sprinkle of garlic powder
A sprinkle of red pepper flakes (optional)
Salt and pepper to taste
Saute onions and peppers in oil until slightly softened. Stir in spinach and cook 1-2 minutes. Add mushrooms and cook until softened. Add tofu, tumeric, nutritional yeast, garlic, red pepper flakes, and salt and pepper. Simmer, stirring occasionally, for 5 minutes. Add tomatoes and cook for another 5 minutes. Serve hot. Serves 2-3.
Variations:
- Add tater tots (trust us on this one).
- Add chopped vegan sausage links
Serving Suggestions:
- Feeling spicy? Spoon the scramble into a heated tortilla! Add salsa and hot sauce and you’ve got yourself a vegan breakfast burrito.
