Topped with dollops of tofu-ricotta cheese, sauteed spinach and roma tomato slices, this pizza pretty much kicks ass.

Pizza dough, or one pre-made pizza crust

1/4 cup extra virgin olive oil

4-5 cloves garlic, minced

1 cup tofu basil ricotta

1 tablespoon olive oil

2 1/2-3 cups fresh spinach, loosely packed

2-3 Roma tomatoes, sliced

2 tablespoons fresh basil, chopped

Sprinkle of oregano

Sprinkle of crushed red peppers

Sprinkle of garlic powder

Salt and pepper

Preheat oven to 450 degrees. Saute spinach in 1 tablespoon olive oil until softened, about 2-3 minutes, and set aside. In a small bowl, combine 1/4 cup olive oil and minced garlic. Using a pastry brush, brush the oil and garlic mixture onto the pizza dough or crust until evenly distributed. Drop teaspoons of the tofu ricotta around the pizza crust. Top with tomato slices and sauteed spinach. Sprinkle with spices and bake for 10-15 minutes or until crust is golden brown.

Variations:

  • Make it a stuffed crust pizza! Line the edges of the dough with sliced vegan mozzarella cheese and fold the crust over onto itself. This will bring back all those wonderful memories of cheap, stuffed crust pizzas.

    This looks really good! It’s the middle of the night and I’m not hungry at all, but this makes me feel like I need to make pizza right now. Otherwise bad things will happen.

    I actually need to use some Cheesly, spinach and mushrooms soon (and I think mushrooms would go well on this).

    I must know what pizza crust you made, it looks perfect! I hope it is a recipe… I am seeking a good pizza dough recipe to make, as the last few haven’t worked out. I can’t wait to try the tofu ricotta!

    Oh my gosh, I just made this tonight and it was SO good. I could not believe it was vegan. It tasted just like the white pizza I knew and loved so long ago - amazing! I do have a selfish suggestion though - could you put the amount of servings in future recipes (obviously not with things like pizza, but others)? I am not a good guesser about stuff like that, and sometimes I have to 1/2th or 1/4th recipes if I know my boyfriend won’t touch it. Anyway, I’m excited I found your site and you guys are so cute! Happy Thanksgiving!

    hey kimm! we try to put how much each recipe serves on each one but sometimes we forget. generally our recipes will serve 2-3 (since we make them for the two of us and we usually have one serving leftover). if it makes a lot we’ll usually say so, or we’ll give a rough estimate, like serves 6-8. thanks for getting on us about that though and we’ll try to post serving amounts in the future.

    Hi Chelsea! Wow, fast reply! I’m sure I wasn’t very diligent about looking for it, so it’s probably my fault! I’m glad that the servings are 2-3ish as a lot of vegan blogs are for family servings, and my boyfriend and I are really bad about eating leftovers (and I always feel guilty throwing any food away). I really love all of your recipes that I have tried so far, and am really excited about making some of the Thanksgiving ones for my omni bf/family. It really is funny how people think that a vegan Thanksgiving is so absurd! (and how sick is the Presidential “pardon” of one turkey every year?) After reading your “About” I’d love to see a post about how y’all convinced the family to become vegan. I’m 7 years vegetarian, only 6 mo’s vegan, so I am always looking for new recipes and resources to prove that a vegan diet is not entirely hippie-crunchy foods. My family thinks I am going to keel over and die from protein deficiency at any moment, no matter how much I quote John Robbins! Thanks for the reply, I’ll read more closely in the future :) Keep up the great work, I’ll be passing the site along to my friends.
