Sweet caramelized onions combined with vegan sausages gives this pasta dish a fresh, delicious flavor. We use Tofurky Beer Brat sausages but you can really use any kind of vegan sausage with this yummy caramelized onion tomato sauce.

2-3 tablespoons olive oil

1 small onion, thinly sliced

1 teaspoon sugar

2 Tofurky Beer Brat sausages, cut in half and sliced lengthwise

1 15 oz can petite diced tomatoes

2 tablespoons tomato paste

1/4 cup water

1/4 cup fresh basil, chopped

1 tablespoon fresh oregano, chopped

Salt and freshly ground black pepper

1/2 lb ziti

In a medium saucepan, heat the olive oil over medium heat. Add the onion slices and cook until they start to be translucent, about 5 minutes. Lower the heat to low and cook, stirring occasionally, for 15 minutes. Stir in the sugar and cook for another 15 minutes. Add the sausages and to lightly brown them. Add the tomatoes, salt and pepper to taste, tomato paste, and water and bring to a simmer. Meanwhile cook the ziti according to package directions. While pasta is cooking add the basil and oregano and simmer until the ziti is ready. Serve sauce over ziti. Serves 2.
